The laws in the Torah?
I'm not a Torah Observant Jew for exactly that reason. But several of my family find a great deal of relevance to their lives in following the laws that can be followed. Others are member of the Reform movement, and focus more on concepts like Tikkun Olam. I'll star your post for those among my contacts who do follow some of the laws, and maybe they'll be willing to tell you the relevance to them personally. But, I think that's the core issue, personal relevance. When my cousin, who goes to great lengths to keep kosher, she says she does it because it keeps her mindfull, during the mundane activities of cooking and eating, of the loftier aspects of her relationship to God. It seems to work for her.
