The scene is dimly lit. tails or other beverages would sparkle in what little light is available, because both the beverages and the gles would catch the light. No special attention would be given to the waiters and other attendants because they are minor, unimportant characters. They might as well be invisible. Therefore, they are not noticed when they distribute the drinks; that's why the drinks appear to be floating.
